This once under-appreciated steak has become a favorite with family and friends in recent years. This long, narrow, flat and less tender boneless steak is extremely flavorful and holds its own when paired with other bold flavors.
 
This steak benefits from a tenderizing marinade before being prepared on the grill, stovetop or under the high heat of a broiler. This steak makes for a nice fajita cut piece, or to enjoy with pasture-raised eggs as a "Steak and Eggs" combo breakfast.
 
 For a better eating experience, we recommend that you use a steak knife to cut diagonally across the grain into thin slices.
